I am a devoted caesar salad lover. It is difficult for me to order any other salad at a restaurant. Recently, my friend Hayley (you know her – the lovely Tiny Twig) tweeted me for recommendations, and I hope I came through for her pregnancy cravings. Since several others were also curious, I am sharing my tried-and-true favorites for all posterity. Enjoy my friends.
#1. The Ultimate.
I clipped Cristina Ferrare’s recipe from an O Magazine a couple of years ago. It takes some work and anchovies, but the result rivals the best caesar I’ve ever enjoyed (which was at Post Ranch Inn, literally a once-in-a-lifetime meal).
#2. The Local Favorite.
Three blocks from my house in Indianapolis, a tiny restaurant with black walls opened, serving wood-fired pizzas and delicious baked goat cheese. Napolese makes a seriously good caesar salad. While most of you aren’t in my city – I have good news for the Influence Conference attendees: Napolese is opening in the mall adjoining the conference hotel. Meet me there next fall??
#3. The Quick Fix.
When I’m in a pinch, I pick up Dole’s Ultimate Caesar Salad kit at the grocery store. Their dressing has the right amount of garlic and lemon. It includes “artisan” croutons and shaved parmesan. But – don’t use the “herb seasoning packet” — just throw that away.
